Sriracha Fried Rice

Hey guys! So, if you haven’t noticed most of our recipes are made or made better by adding sriracha. Today’s recipe is no different. Today we are talkin bout sriracha fried rice. Yum. It has sriracha so you already know its good. It also has tempeh (protein), brown rice, and all the veggies you want to add (seriously just add what you want it’ll be fine).

This is a tried and true comfort food and a weekly staple for us. Added bonus it is super super easy to make extra and take for lunch the next day because I don’t know about you but I detest making my lunch.

Now this is a mouth burnin recipe so if you don’t like spicy maybe consider cutting the sriracha in half!

 

Yields: 2 main dish sized portion/Prep time: 15 minutes/Cook time: 20 minutes

 

Ingredients

2 tbsp veggie oil

1 tbsp sesame oil

1 tbsp rice vinegar

1 tbsp minced garlic

3 cups rice

4 tablespoons sriracha

3 tablespoons soy sauce

1 package tempeh

1/2 cup frozen peas

1/2 white onion, diced

3/4 green bell pepper, diced

Broccoli (however much you want, I like a little Mr. Mindful likes a lot)

1 large carrot, diced

2 green onions (put on top, not absolutely necessary)

You know the drill, this is not an exact science nor is it gourmet cooking. If you add more or less of one thing it will be just fine.

Begin by boiling the water and cooking the rice. Depending on if you have instant vs not instant rice it’ll take longer.

Once the water boils add the rice, stir, cover and simmer on low

While rice is cooking dice your veggies. I dice all of my veggies and just leave them on the cutting board ready to go.

In a skillet preheat the pan on low with some vegetable oil and minced garlic

While the garlic cooks (maybe 2 minutes) break up your package of tempeh. I break it up while it is in the package with my fingers while the husband chooses to use the handle of a knife because #safety

Add the tempeh and sesame oil to the skillet and cook until brown (4 minutes)

After the tempeh is brown toss in the veggies and cook down until soft-ish or lightly browned (5ish minutes)

Now, your rice should be done so go ahead and toss your rice into the skillet and mix your tempeh/veggie mix in with the rice

Add your sriracha and soy sauce and mix until everything is covered

Finally top with some chopped green onion, not necessary but dang it it adds a lil something extra!
