Vegan Banana Pancakes

I am one of those people who wakes up at least once a week and says “we should have pancakes”. My husband tried, oh how he tried, and was unsuccessful many times before we found a recipe that works.

This recipe is easy, uses things you *should* have already, and is delicious.  

Bonus points if you play Jack Johnson’s “Banana Pancakes” while making and/or eating these bad boys.



Yields: 6-10 small pancakes/Prep time: maybe 10 minutes/Cook time: 10 minutes


1 banana

1 cup dairy free milk (we use soy or our homemade oat milk)

1 cup flour

1 tsp vanilla

2 tsp baking powder

2 ½ tbsp canola oil (we didn’t have this one time and I used vegetable oil and it was just fine)

2 tbsp syrup or sugar

Dash of salt

1 tsp cinnamon


Step 1: heat your skillet or griddle for a minute or so on medium heat

Step 2: mix all ingredients together. You can either mash your banana before mixing or just use a hand mixer. I opted for the latter because I am a lazy cook.

Step 3: pour batter on pan/griddle, wait until it bubbling a lot and then flip

Step 4: top with vegan butter, syrup, chocolate chips, or frozen fruit and enjoyyyyy.
