Holiday Recipe Round-Up

As the token vegan of my immediate family I am often in charge of providing food for myself at gatherings. I am more than happy to do it and love any chance to share how yummy vegan food is. This year I had three recipes I found on Pinterest and adapted a bit. I will link the recipes below and just make note of the changes I made based on what I had on hand.

 

Appetizer:

Thyme and cranberry vegan “cheese” ball

What you need: raw cashews, lemon juice, nutritional yeast, coconut oil, white miso paste, garlic, sale, fresh tyme, dried cranberries

What I substituted: nothing, we had everything on hand for this one but I did read that if you do not have miso paste you can substitute with tahini in a pinch.

 

Main Course:

Creamy potato soup

What you need: raw almonds, water, potato, nutritional yeast, black pepper, salt, garlic, cayenne

What I substituted: I used cauliflower instead of almonds and vegan broth instead of water.

 

Dessert:

Chocolate chip sprinkle cookies

What you need: DF butter, peanut butter, sugar, brown sugar, ground flax seeds, corn starch, DF milk, apple cider vinegar, vanilla extract, almond extract, flour, baking soda, baking powder, salt, chocolate chips, sprinkles

What I substituted: I used applesauce instead of ground flax seed

 

Again, I did not come up with these recipes but I adapted them using what we had on hand instead of buying something that wouldn’t get used again. I encourage you to visit the linked blogs, try the recipes, and let me know what you think!
